Cheese Crispies

Baby Shower Finger Foods

1 cup vegetable shortening OR one stick of vegetable shortening
1/2 pound grated sharp Cheddar cheese
2 cups all purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper or cayenne pepper
2 cups rice krispie cereal
pecan halves (optional)

Place shortening in bowl and gradually add grated cheese, blending till mixture if fairly smooth.

Blend flour, salt, pepper and add to cheese mixture mixing at slow speed. Stir in cereal with spoon. shape into balls, 1 teaspoon mixture for each ball. Place on ungreased cookie sheet, lightly press with a fork. Press a pecan half onto top of each, if desired.

Bake at 350 degrees for 10 minutes or until lightly browned around edges. Cool for 10 - 12 minutes on cookie sheet and then remove to rack.
These are a great little snack and the cayenne pepper adds a little bite to them. They freeze well also.

My friend made these for a bridal shower and they would work for a baby shower too.

Curious.. the recipe states it can be frozen. Would you freeze before or after cooking?

I must have done something wrong, because these were neither easy, nor did they taste good. All they tasted like was greasy rice crispies! And it took way too long to hand-roll each little ball.
