Pasta Fagioli with Tortellini

Baby Shower Recipe


Pasta Fagioli with Tortellini

2 Tablespoons olive oil
1 lb pounds sweet or hot turkey Italian sausage
1 medium onion diced
3-4 cloves garlic minced (I use 4 because I like garlic)
1 can stewed tomatoes-Italian style is best
1 small jar (16 oz) of Prego
3 cups water
1 teaspoon chicken flavored granules
1 bay leaf
1 can cannelini beans, undrained
2 stalks celery sliced
1/2 cup matchstick carrots
1 teaspoon dried Italian seasoning
salt and freshly ground pepper (to taste)
1 cup frozen Italian green beans
1 cup frozen cheese tortellini or mini cheese ravioli
fresh grated Parmesan


Heat the oil in large stock pot. Add the onion and garlic and cook until soft but not browned. Add sausage and cook completely. Add everything but the frozen green beans and frozen tortellini (ravioli) and simmer for 45 minutes. Then add the frozen beans and frozen tortellini and cook until beans heated through and tortellini is cooked. Top with fresh grated Parmesan.

Just what I'm looking for!!

This sounds absolutely wonderful! Of course I want to serve snacks, salads, and little sandwiches at the shower, but I still want one hearty main dish to revolve everything around. Thanks for ending my search.
